Buttermilk Chocolate cake

I am trying to make a healthy Chocolate with minimum butter. I have tweak this recipe to

160 ml butter milk

40 g butter

2 tbl rice bran oil

3 tbl coco powder

6 eggs

125g cake flour

1tsp baking powder

vanilla

Instead of a fluffy cake, it turned out like a ant nest, i wonder if it would be possible at all to bake a healthy, skinny chocolate cake that one can eat fairy often.

I have tried to plant camelia many times, but so far they all died on me, hmm black thumb!!!

Got this Sunbeam Cafe Series mixer from hubby a couple months a go .

I would really love to have kitchenaid instead, but its so pricey.

Anyway, this is not a bad machine, its great for making bread, though i think the instruction should be a little clear of how to put on the attachment. Its no rocket science, but I had a hard time fiqure out which of the two attachment go to the right hole.

anyway, I have mostly use it for making bread, It is still most convenient to use my hand held mixer for making cake. may be I am old fashion or old habit die hard. but i have been using the hand held mixer all of my life, its so simple and easy. Couldnt wait for summer time, Its so quick to make bread, as for now it took forever to have the dough rise.
